New Shop Build

I finally have approval for my 60' wide x 50' deep x 18' tall shop (metal building; company: Empire Steel Buildings)

I want (3) 14' wide x 14' tall shop doors. (1) man door. (6) Skiylights. (2) Ridge vents. With their insulation R-19 roof and R-13 walls (goes in between frame and sheet metal) . However, my buddy who has a a similar shop said do my own insulation or spray foam (3x the cost) unsure what to do.

Any do's or don'ts that you guys would recommend?

Ps. I plan to install air conditioning.
